Our wines

You will find here all the products we have created since our arrival at Domaine du Bourdic.

Our range, entirely organic, consists of four wines: a “blanc de noirs” (white wine from black grapes), a rosé and two reds. The names we have given to these wines are references to our former life as lawyers. We provide more details below, product by product. This range will soon be completed by a third red wine, which we have chosen to leave to age in oak barrels for the time being.

Our spirits

In addition to the wines, there are now two spirits, created from the organic wine produced by Domaine du Bourdic. The name of these drinks may not be immediately obvious. To explain why, a point of law is in order!

Within the meaning of Regulation 2019/787/EU of 17 April 2019, the following may not be referred to as “. pastis ” and ” gin “that spirit drinks produced from ” ethyl alcohol of agricultural origin “This type of alcohol is defined as (in particular, the definition is in fact somewhat more complex) a liquid with a minimum alcoholic strength by volume of 96.0% and with no “ no detectable taste “. The consequence of this regulatory framework for ethyl alcohol is that only industrially distilled spirits are likely to meet this definition. Our wines, on the other hand, have been distilled in an artisanal manner, so that the spirit obtained from them cannot be qualified as ethyl alcohol within the meaning of Regulation 2019/787/EU. That’s why we don’t offer you gin or pastis, but two organic spirits, produced in an artisanal way in century-old copper stills from Charente, and which should not be called gin or pastis…

    Nouveauté du millésime 2022, il s’agit d’un viognier à la robe brillante, or clair.

    Très belle expression du cépage avec des arômes de kumquat, de lys, de fruits jaunes (abricot) et d’épices douces. L’attaque se démarque par sa sucrosité́, puis la bouche se développe sur un registre plus frais, avec un équilibre dynamique.

    Vous pourrez apprécier ce vin avec une blanquette de poisson, des crevettes à l’indienne ou un brie aux truffes.

    Nouvelle cuvée dans l’univers des rouges du domaine.

    Assemblage de grenache et cinsault, à la robe violette, qui se démarque par sa fraicheur et son univers aromatique.

    Ce vin développe des arômes d’eucalyptus, de menthol mais aussi floraux et de zan.

    Il accompagne avec bonheur les volailles rôties, un camembert chaud et des poires aux vins rouges.

  • 11,5%vol

    Nouveauté du millésime 2022, ce vin à la robe paille est un subtil résultat de la macération d’un viognier.

    Le nez est puissant, sur un registre de cardamome, d’orange amère, de mandarine et de foin. La bouche a un joli relief, sans excès et avec de la fraicheur.

    Ce vin accompagne avec bonheur un carré de porc au curry, des asperges fraiches accompagnées d’une sauce mousseline.

  • Pro Bono

    Pro bono is a red wine, organic like all of our range, with a luminous, purple color. It is a blend of Grenache, Cinsault, Syrah (and a hint of Cabernet Sauvignon). With a lot of flesh on the attack, a fresh nose of eucalyptus, licorice stick and black pepper, all on a garrigue register, pro bono develops notes of blackberry jam, blackcurrant and clove. The whole is fragrant, soft but fleshy, with a peppery and velvety finish. This generous mouth gave us the idea of ​​the name of this cuvée, Pro bono, a new nod to our former life as lawyers.
  • L’Origin

    L’Origin est une boisson spiritueuse biologique élaborée à base d’alcool résultant de la distillation d’un vin rouge produit au Domaine.

    Aromatisé avec des baies de genièvre sauvage des Pyrénées et des feuilles de mélisse, L’Origin est doux en bouche, très aromatique et épicé, avec une grande longueur en bouche.

    L’Anis est une boisson spiritueuse biologique élaborée à base d’alcool résultant de la distillation d’un vin rouge produit au Domaine

    Aromatisé avec des graines de fenouil, des graines d’anis, de l’anis étoilé et des racines de réglisse, L’Anis s’ouvre sur des notes anisées, avant de laisser petit à petit la place à la réglisse, qui finit par prendre le dessus et donner à L’Anis une incroyable longueur en bouche réglissée.

  • In limine

    In limine is one of our first two red wines, created in a Languedoc spirit from the two main grape varieties of our estate, typical of Languedoc: Grenache and Cinsault. This wine, organic like all our other wines, has a beautiful garnet color with fuchsia nuances. Resolutely on the fruit, in a gourmet register of grenadine, In limine develops notes of burlat cherry, wild strawberry and violet. The mouth is juicy and crunchy.

    Its name, In limine, is still a nod to our former life as lawyers « In limine "In limine", an expression widely used by practitioners of civil procedure, means "on the threshold", "from the start", and that is what this cuvée represents: it is the threshold of our renewal as winegrowers.

  • Hammurabi

    From a chronological point of view, Hammurabi is our very first cuvée. It is a dry white wine, organic like all our wines, which is distinguished by the great particularity of its production. Created from Cinsault, a black grape variety usually intended for the production of red or possibly rosé wines, Hammurabi is a "blanc de noirs", obtained by rapid direct pressing, without any maceration. With a very pale robe, with silver reflections, on a delicate register of white flowers, it develops notes of fresh pear, lemon zest, white pepper and flint. Fluid in the mouth and with a mineral finish, its name is a dedication to our former life as lawyers. Hammurabi is the name of a king of Babylon who reigned between 1792 and 1750 BC., author of the “Code of Hammurabi”, a 2.25 meter high stele now on display at the Louvre Museum. Written in cuneiform script and in the Akkadian language, the "Code of Hammurabi" is known to be the most complete of the codes of laws of ancient Mesopotamia that have come down to us. For law students, it's kind of a starting point. Hammurabi is now the starting point of our oenological adventure.

    Mis en bouteilles un an après les deux autres rouges du millésime 2021, il s’agit d’un assemblage de cinsault, grenache, syrah et cabernet sauvignon.

    Nous avons élevé́ ce vin pendant douze mois, avec curiosité́, dans deux barriques sélectionnées pour leur capacité à révéler les vins sans les écraser.

    Voilà aujourd’hui le résultat de ce travail, avec un vin élégant qui développe une palette d’arômes de fruits rouges et de fruits à noyaux, soutenue par des notes épicées. Le corps présente des notes boisées harmonieuses.

    Ce vin s’apprécie déjà aujourd’hui, mais si vous en avez la patience, il saura encore développer de nouveaux arômes dans quelques années.

  • 1134

    1134 is our first rosé wine. Created by direct pressing from mainly Cinsault, Grenache Blanc and Grenache Gris grapes, but also, although in very small quantities (about 1% of the total), from Syrah and Cabernet Sauvignon which give it its strawberry heart / rose petal color, 1134 has a nose of currant, vine peach and verbena, and develops delicate notes of small red fruits: cranberry, strawberry and cherry. It is an organic wine, like all our wines, with a tonic and thirst-quenching mouthfeel.

    The name of this cuvée, 1134, is a nod to our former life as lawyers. Among the most emblematic articles of the Civil Code is the old article 1134. "Old" because the numbering of the Civil Code changed in 2016, but the weight of habits meant that we never really got used to the new numbers... Article 1134 sets out cardinal principles of French contract law, including that of good faith. This is one of the first articles that budding lawyers work on. A perfect name for one of our first wines, made in good faith.
